Saffron
Saffron known as the “golden spice”, is highly valued for its culinary uses and health benefits. It comes from the dried stigmas of the Crocus sativus, or saffron crocus, a delicate purple flower that blooms in autumn. Harvesting saffron is labor-intensive, requiring around 15,000 stigmas to produce just one ounce, making it the most expensive spice by weight. Iran is responsible for 90% of the world’s saffron production.
In addition to its culinary appeal, saffron offers numerous health benefits. It acts as an antioxidant, enhances mood, alleviates symptoms of depression, improves memory and cognitive function, and can aid in weight loss.
Saffron’s unique flavor pairs well with:
- Rice: Enhances dishes like paella or biryani.

Using saffron effectively enhances both the flavor and color of your dishes. For most recipes, 30-50mg of saffron threads (about 3-4 threads) is ideal. This amount typically suffices to impart a noticeable flavor and rich golden hue without overpowering other ingredients.
Techniques to prepare saffron:
- Traditional hot infusion: Boil water and let it cool to about 80°C (176°F). Measure 30-50 mg of saffron threads and crush them lightly with a mortar and pestle. Place the crushed saffron in a small bowl, pour hot water over it, and let it steep for 15 minutes.
- Cold water infusion: Measure 30-50 mg of saffron threads and crush them lightly with a mortar and pestle. Place the crushed saffron in a small bowl, add 1/4 cup of cold water, and let it sit for at least 10 minutes for a stronger infusion.
- Cold brewing with crushed ice: Measure 30 to 50 mg of saffron threads and lightly crush them with a mortar and pestle. Place the crushed saffron in a bowl with half a cup of crushed ice. Allow the ice to melt slowly to infuse the saffron’s essence into the water, which takes several hours for the best flavor.
